To celebrate this day we tried our first Red Panda birthday cake. Here you find the recipe:
Recipe: Red Panda Birthday Cake
Simple Sponge Cake:
5,2 oz/150 g wheat flour
1,4 oz/40 g cornstarch
3 teaspoons baking powder
5,2 oz/150 g sugar
some vanilla/vanilla sugar
120 ml oil
180 ml milk
3 medium eggs
1 teaspoon love for Red Pandas
Decoration
around 4,4 oz/125 g fondant
red and green food color
chocolate sauce
Equipment
toothpicks
brushes (medium and small)
rolling pin

print it (best A4 landscape) and cut it out.
Method
Mix all dry ingredients (flour, baking powder, starch, sugar and vanilla). Mix the eggs with milk and oil and then add it to the dry ingredients. Pour batter into a springform pan with 26 cm in diameter and bake it at 180 °C for about 30 minutes (on the second shelf from the bottom).
After that allow the cake to cool.
Then use the Red Panda template to cut the cake.
Roll out the fondant with a rolling pin and cover the cake with it. Let it dry briefly. Use the template again and mark those places which should remain white with some small toothpick stitches.
Mix red and green food coloring. The more green you use, the more brownish fur your Red Panda cake will get. I have used the ratio 3: 1. Now color with the medium size brush all the red areas. Clean the brush and allow the color to dry. After that use the fine brush to paint the borders, the nose and the eyes with chocolate sauce.
Shape some whiskers from a small amount of fondant and place them carefully on the cake. The hairs will be automatically fixed by the food coloring.
